It continues. Like an Army Camp or Storage, it doesn't stop functioning.

However, you cannot research anything new while it's upgrading.

Does upgrading the laboratory stop research?

It is possible to upgrade the Laboratory itself while an upgrade is happening within the Laboratory, and research will continue as normal while the Laboratory is being upgraded. However, you cannot start new research projects during the upgrade period.

Does upgrading your laboratory cancel troop upgrade?

Also when upgrading troops plan ahead because unlike when upgrading buildings you can't cancel troop upgrades in the laboratory. If you start research and then upgrade your lab before it has done, the research is halted until the upgrade completes.
