Looks like the GOG's version if No Man's Sky doesn't even have the multiplayer feature so far. So the answer is "No, it's not possible right now".

Yes. It's hosted via game servers iirc. Yes, you can play with anyone who purchased the game on PC, so it doesn't matter which platform it is.Vybz Kartel - No Man
